Jörg Zielske change his lifestyle as financial assessor in Germany to dedícate his body and soul to his passion of wine. He was born and studied in Germany then he looked for his future in the lands of Arribes and Leon.
When Zielske was 22 years old, he was a student helper during the grape harvest in Bordeaux. Nine years later, he realized that he wanted to be a winemaker. Without a deep knowledge about oenology, without experience and the neccesary things to do it, he decided to make a dream come true.
In 2006, he traveled to Sevilla in order to master this knowledge in the vineyards of Ribera de Guadiana, Extremadura, Sanlúcar de Barrameda y Jerez, where he visited several wineries and wine makers. He discovered the wines from Toro by coincidence in Sevilla and he loved the good relation between the quality and price.
He spent several weeks in different vineyards, watching the different cycles of maturation of the grapes and their care. He was studying about the viticulture and the wine. He visited wine fairs and went to conferences in univerisities from Badajoz and Madrid.
At the end of 2008, he went to search for small-scale winemakers because he finally decided to produce his own wines.

THE VINEYARDS. THE LAND.


Jörg affirms that the cultivated vines have to develop and strengthen in the natural spaces of their origin in order to learn about surviving the plagues and diseases in each area.
With vineyards, some of them with more than 100 years old, showed a natural resistence to diseases and lack of wáter. From this, Jörg got high quality grapes and this was reflected in the wines.
He recovered native varieties in vineyards of vines that aged from 70 to 160 years old of the area as is the case of Albarin, Garnacha centenaria, Prieto Picudo, Bruñal, Rufete, Bastardillo Chico, Juan García, Tinta de Madrid,…… to create unique and singular wines, which gave us exceptional quality.
It has been 70 to 160 years since these native species were cultivated? I do not really understand this sentence.

WINEMAKING AND AGING. ART AND SCIENCE

He only uses native yeasts of the vine in the winery, used for clarification and the stabilization of the wines, as single natural proteins. With a long crianza in the barrel, the wine does not need stabilization and before bottling, he only needed to microoxygenize it.
Ecological vineyards, although not certificated, look after their wine with great respect for nature and biodynamic processes. These wines are handmade productions with long crianzas and, ultimately, are wines made with art, dedication and infinite patience. Around 80 % of wine quality produced begins in the vineyard, affirms Zielske.
He actually has his own winery in the Fregeneda (Salamanca), south of the Denomination of Origin Arribes, which is about 6.5 Km from Portugal. On the other side of the river the DOC Douro begins, which is an idyllic environment.
In all of this time, Jörg did not stop in the effort to get a wine that was better with each passing year, thanks to the greater knowledge of the varieties and their behaviours as much in the vineyard as in their processing.
